Kelarutan dan Swelling Power Mikrokapsul β-Karoten Terenkapsulasi dalam Matriks Pati-Kitosan Terikat Silang Ion Tripolifosfat

Pada penelitian ini, mikroenkapsulasi β-karoten dilakukan dalam matriks campuran pati dan kitosan dengan penambahan ion tripolifosfat sebagai pengikat silang (dilambangkan pati-kitosan/TPP). Dua jenis yang digunakan di sini, yaitu asli terhidrolisis. Pati terhidrolisis dibuat hidrolisis asam menggunakan HCl 2 M. Mikrokapsul disintesis menambahkan dispersi tetes demi etanol ke pati-kitosan/TPP disertai pengadukan magnetis pemanasan pada suhu 90ºC. hasil sintesis kemudian diuji kelarutan swelling power-nya media air. Hasil menunjukkan bahwa power mikrokapsul dipengaruhi oleh karakteristik penyusunnya. Kelarutan lebih besar dibandingkan asli-kitosan/TPP. asli-kitosan/TPP memiliki tinggi terhidrolisis-kitosan/TPP.
